WHere is a simplified version of a beverage found on our latest drinks list. This is a large-volume pre-mixed which is packed with the tastes of the festive period, which makes it perfect for a holiday party. Any leftover citrus syrup to use in brunch beverages, puddings, or to make more rounds of bikinis.
The Bikini Cocktail
Yields 10 people
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Cordial: Combine all the ingredients in a pan, heat until it reaches a gentle boil, mixing to dissolve. Then, turn off the heat and let it to cool down completely. Transfer into a sterilised bottle, cap it and store chilled, it can be stored for about a month.
For the Batch Mix: Pour every liquids in a sizeable container, allow it to infuse for one hour, then strain , ideally through a fine cloth, making it completely strained.
To serve: Measure 85ml of your premix into your stirring glass filled with ice, gently stirring carefully for one minute until cold. Strain into an chilled martini glass or equivalent, top with some cranberries and complete it by giving it a quick spritz with the mandarin essence over the drink.
